BANANA COCONUT CRUNCH MUFFINS

I love how a simple recipe of muffin turned into an healthy recipe.  All the ingredients work well together and not a single ingredient overpowers other .  A great combination of coconut which adds little sweetness while  granola and nuts add  crunchiness.  I love it when you all try my recipes and then creat your on version of them . INGREDIENTS

  1. 1 ½ cup all-purpose flour (209grms)

  2. 1 cup castor sugar (204grms)

  3. ½ tsp baking soda

  4. 1 tsp baking powder

  5. ¼ tsp salt

  6. 4oz (1stick)  butter

  7. 1 no. egg

  8. ½ cup + 2 tbsp milk

  9.  ½ cup ripe  bananas diced

  10.  ½ cup mashed bananas

  11. ½ cup diced walnuts

  12. ½ cup granola

  13. ½ cup coconut shredded + extra for topping

PROCEDURE

  1. Pre-heat the oven to 180C. line a 12 cup muffin tin with paper liners.

  2. In the bowl of an electric mixer fitted with the paddle attachment, combine flour, sugar, baking powder, baking soda and salt.

  3. Add the melted butter and blend.

  4. Add the eggs, milk, vanilla and mashed bananas to flour and butter mixture and mix well.

  5. Fold the diced bananas, walnuts, granolas and coconut into the batter.

  6. Spoon the batter into the muffin cups, filling each ¾ full. Top with extra coconut, if desired.

  7. Bake 24-26 minutes, or until a toothpick inserted into the center of muffin comes out clean.

  8. Allow to cool in the pan for 10 minutes, and then transfer to a wire rack to cool completely.
