BANANA COCONUT CRUNCH MUFFINS
I love how a simple recipe of muffin turned into an healthy recipe. All the ingredients work well together and not a single ingredient overpowers other . A great combination of coconut which adds little sweetness while granola and nuts add crunchiness. I love it when you all try my recipes and then creat your on version of them . INGREDIENTS
1 ½ cup all-purpose flour (209grms)
1 cup castor sugar (204grms)
½ tsp baking soda
1 tsp baking powder
¼ tsp salt
4oz (1stick) butter
1 no. egg
½ cup + 2 tbsp milk
½ cup ripe bananas diced
½ cup mashed bananas
½ cup diced walnuts
½ cup granola
½ cup coconut shredded + extra for topping
PROCEDURE
Pre-heat the oven to 180C. line a 12 cup muffin tin with paper liners.
In the bowl of an electric mixer fitted with the paddle attachment, combine flour, sugar, baking powder, baking soda and salt.
Add the melted butter and blend.
Add the eggs, milk, vanilla and mashed bananas to flour and butter mixture and mix well.
Fold the diced bananas, walnuts, granolas and coconut into the batter.
Spoon the batter into the muffin cups, filling each ¾ full. Top with extra coconut, if desired.
Bake 24-26 minutes, or until a toothpick inserted into the center of muffin comes out clean.
Allow to cool in the pan for 10 minutes, and then transfer to a wire rack to cool completely.
